The first indicator we check is the fat infiltration: those white veins marbling the meat are the unmistakable hallmark of slow curing and superior Iberian genetics.

The secret lies in the origin. The finest 100% Iberian pigs spend their "montanera" season in the dehesa, feeding on acorns, grass, and natural resources. Acorns are extraordinarily rich in oleic acid, making the acorn-fed shoulder a healthy product with a deep, cellar-aged aroma. Our masters verify each piece through "calado" (scenting), rejecting any specimen that does not reach the optimal level of natural curing.
